At Plano, nature defines us. It is at its pace that we move, respecting its cycles, what it offers us and those who dedicate their days to rescue the substance that feeds us from the land and the sea.We believe in the perfection of small things, small producers, crooked vegetables, the almost forgotten ingredients. We believe in the magic of the artisans, of the imperfectly perfect plates, of the pieces that carry a part of those who build them. We believe in the stories that each element of our table tells. Every day we try to pay tribute to the world, to enjoy it, to share it. To return to the earth the same generosity it offer us.

Outdoors, in the garden that serves as a shelter on the hottest days, in the midst of the aroma of orange trees and the heat of the fire, in the two interior rooms with minimalist decor and earthy shades or in our private room, created in the old cistern, we try to welcome everyone who arrives as if they were arriving at our home. A home led by chef Vítor Adão and a young team, passionate about the mission of bringing together the best of Portugal in the plates and in the glasses and sharing it with the world. CHEF VÍTOR ADÃO

Born in a small village near Chaves, in 1990, Vítor Adão's first gastronomic memories are from “tainadas”: gatherings around full tables, at the end of the days working in the land, which lasted into the night, with glasses always full and dishes appearing in the table, in houses with inevitably open doors. Food - which neighbors and family grew, harvested and later ate together - has always been synonymous with sharing. It was with the elders that he first saw sausages being made, that he saw praying over the dough of traditional “Bola de Chaves”, that he learned to respect the product. From the pots that he burned and hid under his bed, he started attending the José Ribeirinho Machado cooking school, in Vilarandelo, at the age of 14. From there, he went to Escola de Hotelaria e Turismo de Mirandela, where he would later teach classes. He spent some time at DOC and DOP kitchens, interned at Ocean and Vila Joya, and made a stop at London's 45 Park Lane, by chef Wolfgang Puck. He was executive chef of 100 Maneiras group from 2016 to 2018. Later, he became consultant at Quinta do Arneiro and, in 2019, he opened the successful pop-up Izakaya Tokkuri, in Bairro Alto, Lisbon, meanwhile closed and, in the same year, he became curator of the Tabernas do Alto Tâmega network. In August 2019, he opened his first solo restaurant: Plano. In his cuisine, respect for tradition, for the land, for the products and the origin stands out, combined with a contemporary and very personal approach.
